About Our Bread + Jack's Food for Thought

Our bread is probiotically cultered sourdough with no added baker's yeast

Amino acids, asparagine, and glucose in high heat create acrylamide which is found in the crust. Acrylamide can cause cancer - that's why we don't hard crust our bread. Our crust is mindfully developed into a chewy and delicious texture.
